You know what they say: “April showers bring May flowers.” However, in my experience, it’s been more like “April showers bring May flowers as well as May showers.” It’s spring, after all. The rain and constant wetness won’t really end until the season does.
But you know what? I’m 100% okay with that. Rain isn’t my favorite thing, but, without it, we wouldn’t have all of our wonderful spring (and summer!) produce! Plus, rainy days and nights are the perfect excuse to curl up with quick and easy dinner recipes.
Sure, I’m a fan of shortcuts whenever I can take them, but I’m also a person who gets the overwhelming urge to just curl up on my couch when it’s raining. There’s no way that I’ll ever have enough energy to make full-on healthy meals on rainy days. That’s why I turn to easy healthy dinner recipes.
Just because a meal is healthy doesn’t mean that it has to take a ton of time or effort to prepare. I feel like that’s a myth that everyone automatically sees as truth. Even my mom. The last time I talked to her about cooking, she seemed wholly against trying some of the simple healthy dinner recipes that I suggested because she heard the word “healthy” and immediately started talking about how she’s strapped for time. No matter how much I laughed and told her that she’s wrong, I couldn’t change her mind.
Don’t be like my mom. The blogger recipes below are proof that it’s possible for easy dinner recipes to be healthy. Just give them a try.
