My name is Lindsay and I blog over at The Lean Green Bean. I’m one of those people that really likes summer (I mean really, who doesn’t?) so I get especially excited when Memorial Day rolls around each year. Growing up, we always had to go to school a few days after Memorial Day to make up our snow days. But I always remember the weekend as feeling like summer was officially here.
When Matt asked me to write a guest post for him relating to memories of Memorial Day, I immediately thought of fruit pizza. Is that weird? Most people probably think of flags or cookouts or something, but I used to make fruit pizza with my best friend for just about any get-together we had in the summer….so the thought process was Memorial Day –>summer –> fruit pizza. See? Totally normal. Anyways, I wasn’t in the mood to make fruit pizza, but my thought process got me thinking about what kind of fruity dish I could make to share with you guys.
Since Memorial Day is all about red, white and blue….I decided to use strawberries, bananas and blueberries. Then, instead of putting them on pizza, I put them in a parfait…with oatmeal…and peanut butter….and Greek yogurt. YUM!
Here’s how it started:
I made some plain oatmeal, and added half a banana (mashed) and a scoop of peanut butter. I sliced up the rest of the banana and some strawberries and washed them along with some blueberries. Then I decided I didn’t want my yogurt to be plain white, so I added a scoop of homemade blackberry jam to some plain Greek yogurt.
Layer everything into a stemless wineglass. Just trust me- it’s more fun than eating out of a bowl:
