    I enjoy all of the vegetables. Choosing a favorite is like choosing your favorite child. They all add color and texture. I DO like to add a dolop of cottage cheese after thoroughly cooked. Adds a creamy texture to the pie.

    I love the idea of sweet potato in this recipe. I never met a veggie I don’t like, and so a good variety is good for a pot pie. I think carrots should be sure to be added, though!

    Since becoming a new mommy and trying to eat healthier to have her grow up right so I put lots of the traditional veggies in there but last time I put egg plant as well. Best part she loved it 🙂 score one for the new mommy cook!!!

    I would definitely add some pearl onions to the pie. I cannot cook without onions as they add so much flavor to a wide variety of foods. I love the standard vegetables (carrots, peas, etc.) but the pearl onions add a special touch and taste to the pot pie.

    Can’t pick just one, chicken pot pie is the whole of it’s ingredients!! For me it would be peas, carrots, corn, and green beans. I like the one post suggesting substituting cauliflower for the potatoes, will have to try that next time I make a pie.

    I like a different type of vegetable in my pot pie. I’m allergic to peas, so I add broccoli and cauliflower. Plus onions ,carrots, celery, and potatoes. So I guess my answer is broccoli and cauliflower.
