I looooove my crockpot. Who doesn’t? You throw all the stuff in there before work or after breakfast, and by the time lunch or dinner rolls around you have a delicious, slow-cooked meal. No matter what time of year, I’m also a huge fan of soup. Broth-based soups are generally low in calories and most recipes include a good number of vegetables. The author of French Woman Don’t Get Fat, Mireilla Guiliano recommends soup in her famous book, as a way to avoid over-eating and stay hydrated. WHen I’m not eating leftovers for lunch, I’m generally having soup. Here are three quick and easy crockpot soup recipes:
- Crockpot Lentil-Vegetable Soup– Lentils are fantastically healthy and a great source of vegan protein. This recipe calls for two slices of bacon for flavor, but you can omit and use vegetable or chicken stock in place of water if you like.
- Crockpot Mediterranean Soup– The Mediterranean Diet is supposed to be one of the healthiest in the world and you can enjoy the benefits with this recipe. Use fresh oregano for the best flavor.
- Crockpot Chicken and Rice Soup– If you prefer your soup with meat, try this slow-cooked soup made with chicken pieces. You’ll never go back to canned again! Use brown rice for more fiber and a healthier soup.
