Easy Mexican Chicken Lasagna (pictured above, right): If you’re looking for some quick dinner ideas, this zesty Mexican dish is quite the contender. The combination of soft flour tortillas, cream of mushroom soup and rich nacho cheese makes this meal impossible to resist.
Easy Slow Cooker Meals

I really enjoyed this post! Being a college student and also currently studying abroad, time and money is of the utmost importance to me. These dishes definitely are time savers and definitely appeal to the younger generations!

I especially love these because it looks like I can use leftovers, or reheat it so it can be both my dinner, and the next day’s lunch, which is a huge relief when I am rushing out the door in the morning.

Not only are these quick recipes, but they use a lot of simple ingredients! So many casseroles call for things that I can never find at the grocery store, but these are great. DEFINITELY trying the Easy Mexican Chicken Lasagna– Might even make some homemade guacamole to go with. Thanks!
These look absolutely delicious! I love how they incorporate many different vegetables and healthy protein while not completely sacrificing some of the more indulgent ingredients. I agree with Megan Hambleton; these recipes call for ingredients I don’t have to go out of my way to buy and allow me to easily alter serving sizes. I might even try making several in the beginning of the week and freezing them for the extra convenience. I can’t wait to try them out!
More proof that being busy should not mean sacrificing excellent meals! The Easy, Cheesy Chicken Casserole reminds me of a dish my grandma used to make every Christmas (only her version took nearly all day!) Thanks for helping even us beginner, time-strapped chefs make deliciousness. 🙂
