I have a huge sweet tooth. I even love savory dishes made with fruit (such as pork in plum sauce) or a touch of brown sugar. Unfortunately, refined white sugar is not healthy. I think we all know or at least suspect as much. Everyday white sugar has a very high glycemic index and is associated with decreased immune system function. Artificial sweetners are not much better.
Natural sweeteners such as honey and agave nectar are a better choice. Agave nectar has a much milder taste than honey, making it a good choice for baking. Unlike honey, agave nectar is also 100% vegan, made from the agave plant (the same plant used to make tequila).
When baking with agave nectar instead of sugar, you have to adjust your measurements slightly to account for more liquid. Agave syrup is actually sweeter than sugar, so reduce the amount of sweetener called for in the recipe by 1/4-1/3. Also, decrease the amount of other liquids called for in the recipe by 1/4-1/3. In other words, if a recipe calls for 1 cup of sugar and 1 cup of milk, use 2/3 cup agave and 2/3 cup milk.
