Last weekend, we had a family party to celebrate Mother’s Day, three birthdays, and Father’s Day. Yes, we have a lot to celebrate this time of year! Well, I had decided to make this Quick and Very Easy Fruit Salad, and it was a huge hit! I opted to use fresh fruit instead of canned we just went to our warehouse club and bought the big tray of precut melon and pineapple with blueberries and grapes and cut the bigger pieces into bite-sized ones. My 2 ½-year-old son loves to cook, both pretend and for real, so he helped me put the small pieces of fruit into a big bowl, and he helped mix the dressing. He got a kick out of mixing the dressing with the fruit…and out of licking the spoon! The salad was such a hit that even my brother-in-law-to-be liked it, and he doesn’t like fruit salad. I guess the real testament was that we had none to take home with us after the party!
We have another family shindig coming up later this month, and since we anticipate having 18 people total, I’m planning to serve this easy All Purpose Punch. I don’t think we have an actual punch bowl, but we do have one of those giant yellow Tupperware bowls that seem to be ubiquitous. Since kids will be coming, that’s probably a better idea anyway!
Keep your fingers crossed for nice weather that day…18 people in the yard sounds much more manageable than 18 people in my family room!
