Well, here we are at the third weekend in July and our first kiddie swim class of the season. OK, the kids are 2 1/2 years old and 6 months old, so they are really “splash†classes, but will be fun nonetheless. The only problem is that the high temp is supposed to be 70F, and that probably won’t be until long after class is over. That being the case, I think this weekend calls for some warm, comforting food. The baby won’t get to eat it (not quite yet!), but my older son will, and will likely help cook it, too.
Since we have to please my husband too, I think we’ll make this Almost-A-Meal Casserole recipe. It’s got the meat and potatoes right in there, plus a lot more other good stuff — and he’s a meat and potatoes kind of guy. He does love cooking and trying other foods too, but it’s all about the comfort food this weekend. I think we’ll make a nice warm dessert, too. Not that we’ll still be cold by dinnertime or afterwards, but who can resist a good brownie? RecipeLion has lots of good brownie recipes, including these Wicked Good Brownies.
