Well it’s that time of year again, our Christmas Cookie Countdown 2010 is in full swing! We continue to count down from day 110 with a new cookie recipe each day until the big day. Happy bakers everywhere are tackling new, yummy cookie recipes every week. I know what you’re thinking, it’s not even Halloween yet and I’m bringing up Christmas. Well if the world of retail thinks it’s never too early to start bringing up Christmas, I figured we’d be good to go here.
Besides not all of the cookie recipes in the countdown are strictly Christmas related, check out these delectable Butter Pecan Cookies, yum! Also one of the things I’ve found is that basic sugar cookie recipes seem to always go over well with a crowd, any time of the year. Like these Chewy Sugar Cookies, timeless cookies never lose their appeal and you really can’t go wrong when the cookie says chewy in it.
Really it’s quite daunting at how many cookie recipes are out there. It seems that almost anything has been put into a cookie, like these Potato Chip Cookies from Vino Luci, too delicious for words. Even more tempting are these Red Velvet Cookies I found from Relatively Unique, who needs cupcakes right? The opportunities are endless and with opportune baking weather just around the corner, I dare you to tackle a new recipe every week. I can’t wait.
Honestly though I just adore Christmas countdowns. It reminds me of those childhood days when my Mom would help us set up our 45 days till Christmas candy vine, where every day we’d get a new piece of candy until the big day. I mean, come on as a kid it doesn’t get much better than that. Unless of course I’d gotten a new cookie every day, well then we’d really be talking.

Can’t find the toffee macadamia cookie recipe on Martha Stewart site. It was on her show years ago and I can’t find my print of it. HELP!
So I got a request for pumpkin cookies. Yep, it is that time of year again. So I asked my daughter, son-in-law, two son’s, and a neighbor if they went to the store could they pick up a couple of cans of pumpkin for me. (I’m am housebound.) Would you belive that out of five supermarkets there was not one can available. So I ended up buying two small pumpkins at an exhorbitant price and baking them for the pulp.
A couple of days later I was relating my dillema to a couple of neighbors and what i had gone through trying to find two cans of pumpkin. In the middle of the story one of them piped up and informed me that he had two cans and I could have them. Bless his heart. I now have eight cups of pumpkin including the two cans. More than enough to make him some cookies also.
