As we roll into August, we are coming up on the best time of year for sweet corn. Sweet corn is delicious during the month of August, and even better it’s inexpensive! If you can, stop by a farmer’s market and buy locally grown sweet corn this month before trying it in one of our fantastic recipes. You can cut the corn straight off the cob and replace canned corn with fresh in any of our recipes.

Black Bean and Corn Salsa – This healthy, protein-rich salsa makes a great afternoon snack with baked tortilla chips or a filling for whole-wheat tortillas. Serve over grilled vegetables for a healthy meal.
