In my opinion, one of the most taken for granted foods is dip. I know most people will say they like some sort of dip, but few people truly appreciate the versatility of this dish. Dips don’t have to be heavy, creamy, unhealthy and only used for when you have company over. They can be a light and healthy addition to any meal. I personally love having carrots and hummus for lunch. I like buying my favorite Greek olive hummus from the grocery store, but it’s simple to make with just ground chickpeas, tahini, olive oil, lemon juice, garlic and any appropriate spices to top it off.
One of my favorite dips is, of course, salsa. I like putting it on a Southwestern salad with corn, black beans, sharp chedder cheese, and grilled chicken. I’ll eat mango salsa with tortilla chips, veggies, and I love using it as a topping for grilled salmon.
Check out this feta salsa from Closet Cooking. It looks absolutely amazing. I’m not sure what qualifies it as a salsa exactly…maybe the sun-dried tomatoes. Eat it with warm pita bread, top your salad with it or just enjoy it plain.
