Today’s Recipe
On the twelfth day of our 12 Days of Christmas in July Giveaway, my true love gave to me…this Simple Herbed Cucumber Tea Sandwiches inspired by Epicurean and cooked up in our test kitchen!
INGREDIENTS
- 8 slices white bread
- 1 stick of butter, room temperature
- 1 tablespoon lemon
- 1 tablespoon lemon zest
- Pinch of salt and pepper
- 1/4 cup chopped fresh herbs (such as dill, parsley, chives)
- 1 english style cucumber, rinsed and sliced thin
- 4 slices of sharp cheddar cheese
DIRECTIONS
In a bowl, mix butter with lemon, lemon zest, chopped herbs, salt and pepper.
Flatten sandwich bread lightly with a rolling pin.
Assemble sandwiches as follows: Spread butter on one side of each slice of bread generously. Top 4 slices with cucumber and cheddar. Add second slice of bread, butter side down.
Trim crust from each sandwich, cut into quarters and serve.

I like to serve miniature pasties (Cornish meat pies) with gravy to dip them in. My daughter says her favorite is nacho cheese Doritos, today.

Chicken taquitos with sour cream, guacamole and salsa. Easy to prepare and So Delicious! Who doesn’t like taquitos?

My favourite finger foods to serve is Chicken wings, battered mushrooms, potato skins, that is just some!!
My fave finger food is always mini meatballs with dipping sauce.
In a small bowl, combine the cream cheese, fresh dill , lemon zest , and lemon juice . Season the mixture with salt and pepper. Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.
