Hey there! Holly here from Club Crafted again with a gluten free recipe that doesn’t compromise on taste. Flourless chocolate cake is deliciously moist and fudgy, and it’s a great recipe for those on a gluten free diet.
The other great thing about flourless chocolate cake is how easy is it to make, and it requires minimal dishes, which is quite the bonus! Dust it with powdered sugar or cocoa powder, and serve it with a dollop of whipped cream or a side of fresh fruit.
Ingredients:
- 4 ounces fine-quality bittersweet or semi-sweet chocolate
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- Powdered sugar for sprinkling, optional
Preheat the oven to 350 degrees and lightly spray an 8 or 9-inch baking pan with cooking spray. Add a round piece of parchment to the bottom and spray again with cooking spray, or use the wrapper from the butter in its place.
In a small saucepan, melt the butter on low heat. Add the chopped chocolate and stir with a whisk until smooth. Remove from heat and stir in the granulated sugar, followed by each egg and vanilla, whisking well between each addition. Lastly, sift the cocoa powder into the mixture and whisk until smooth.
Pour the mixture into the prepared pan and smooth the top. Bake for about 25-28 minutes until the top forms a light crust. Allow to cool completely before carefully removing from the pan, turning the top down onto a plate.
Sprinkle with powdered sugar and cocoa powder if desired and serve with whipped cream or fresh fruit.
