Happy 2012, chicken casserole lovers! How are the New Year’s resolutions coming? I know some of mine have already begun to fail a little bit, but I’m particularly rocking one part of my list. To celebrate the brand new year, I made a list of resolutions… Chicken casserole style!
That’s right, I found all of the latest and greatest chicken casserole recipes on AllFreeChickenCasseroleRecipes.com, and I resolved to make at least four before the first month of the year ended (one for each week). Seriously, from cheesy chicken casserole recipes, to chicken tortilla casserole recipes, to epic chicken noodle casserole recipes, I have the ultimate collection at my disposal. Plus, with all of the new recipes I found on the site, I won’t even have to revert back to boring old basics.
Sure, my goal in this is not just to learn more about making awesome chicken casseroles. Indeed, my ulterior motive lies mostly in the thick blanket of snow accumulating outside of my window. There is no better way to warm up and banish the blues of a winter whiteout than to curl up with a steaming mound of amazing chicken casserole. Check out my favorite chilly weather bites below and try them for yourself!
When the ground is frozen, nothing warms you up faster than a nice spot of spice in Mexican chicken casserole recipes like Baked Chicken Cheese Enchiladas with Easy Enchilada Sauce. This chicken tortilla casserole recipe is perfect because the cheese melts oh-se perfectly over the enchiladas. I may have just died and gone to Tex-Mex heaven!
Week 2: Buffalo Chicken Pasta
Move over, hot wings! Buffalo sauce isn’t just for beer-guzzling guys anymore. Get the flavor without the mess and add a bit of class by making this Buffalo Chicken Pasta. It tastes just like your favorite buffalo wings with a tasty pasta twist, and it lacks the grease of it’s fried chicken cousin.
This little pick-me-up is JUST what I need to recover from that wintry haze. I warmed up and did the twist while I made this Twisted Chicken, Mushroom and Green Bean Casserole. With mushrooms, green beans, and grilled chicken, this baked beauty didn’t make me feel unhealthy, but it was just as satisfying as my other recipes. I wanted to twist and shout!
Week 4: Rustic Baked Rigatoni
This one has to be my favorite so far. I am already a sucker for Italian food, but this transported me from snowy, depressing Chicago to the sunny hills of the Italian countryside. Embrace your inner Mediterranean soul and try Rustic Baked Rigatoni, Molto bella!
