One of my favorite TV shows of all time is “Top Chef.” I can’t get enough of the drama (how funny is it to see people arguing over a tomato sauce?!) and I think it’s fascinating to watching culinary pros come up with inventive dishes under ridiculously difficult time constraints. “Top Chef” is where I was first introduced to the magical cooking technique of sous vide (pronounced soo-veed), which involves cooking food in vacuum-sealed pouches submerged in a water bath held at a precisely-controlled temperature. What this does is it eliminates most of the guesswork that comes with cooking meat so that anyone, home cook or Top Chef alike, can get awesome results from whatever they’re cooking, whether it’s steak, chicken breast, ribs, pork… you name it! It’s a practically foolproof method that’s pretty awesome to watch… and even more magical to see work in person.
