My favorite Italian dish is spegetti with a sauce that my grandmother and mother used and taught me to make. It is a tomato based sauce with fresh vegetables and spices that simmer for 10 hours and then in the last 2 hours you add the meatballs and Italian in the sausage that have been partially cooked in olive oil, garlic and onions. Let the meat finish cooking and absorb the flavor of the sauce. They made it on the stove top in a 2 gal pot stirring frequently all day. Today I use a Crockpot. First 2 hrs on H, next 6 L and final 2 on H.
