Summertime and the living’s easy! There are so many things that we love about the summer: the sun is always out, it’s the time of year to take out the grill and enjoy some great recipes for the grill, and it is the season of fresh fruits. There’s watermelon, cantaloupe, oranges, and strawberries oh my!
The one fruit that we absolutely adore are strawberries. Not only are they sweet and delicious, but you can easily grow them in your own garden. And don’t even get us started on recipes with strawberries in them.

Strawberry Kheer (Strawberry Pudding)
This is a very popular Indian dessert with a slight twist. Strawberries that are in season now add a lovely fruity taste to this really simple and delicious recipe. This recipe can be prepared very quickly and serves 4 people. You can use frozen strawberries if fresh ones are not available.
Ingredients
4 cups milk (you can use non-fat though full-fat milk is preferred for its creamy texture)
¼ cup rice (washed)
1 pod cardamom
3 tbsp. sugar (or to taste)
12 fresh strawberries chopped
A few slivers of almonds to garnish
3-4 strawberries sliced for garnish
Method:
Keep aside 1/2 cup milk. Take strawberries reserving the ones for garnish and microwave in a bowl on high heat for a couple of minutes with a little water. Add this to the milk and blend into a puree in a cuisinart elite collection food processor. Keep aside.
Boil the remaining milk with sugar, cardamom pod, and rice on a low flame. Boil for 15-20 minutes or till the milk reduces to half the original quantity and the rice is well cooked. Turn off the flame and allow it to cool. Take out the cardamom pod. We just need it for flavor. Add the strawberry-milk mixture to the pudding. Mix well and taste to check the sweetness. Do not cook any further or the milk might curdle. Now cool the pudding in the fridge. Garnish it with slivers of almonds and sliced strawberries and serve chilled.
Your tasty, refreshing strawberry kheer is ready. It is simple to make and does not require too many ingredients or too much time to cook.
Tip: To further cut down cooking time, you can use half condensed milk and half normal milk, but remember to adjust the amount of sugar that you use.
