Hawaiian Coleslaw Recipe + Win a Picnic Prize Basket

Today’s Recipe

On the sixth day of our 12 Days of Christmas in July Giveaway, my true love gave to me…the Hawaiian Coleslaw recipe from our Test Kitchen!

Serves 6

INGREDIENTS

  • 5 cups shredded cabbage (about one small head)
  • 2 medium carrots, shredded
  • 1 8-oz can crushed pineapple, drained and juice reserved (see note)
  • 1/4 cup mayonnaise
  • 3 tablespoon white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper

DIRECTIONS

  1. Combine mayonnaise, vinegar, sugar, mustard and salt and pepper in the bottom of a large bowl and mix well.
  2. Add cabbage, carrots and drained pineapple and toss well.
  3. Taste and adjust flavors, adding some of the reserved pineapple juice, more vinegar or sugar as desired.
  4. Cover and chill for at least 1 hour before serving to allow flavors to meld.

NOTES: The vinegar plus the sugar in the dressing give it a delicious sweet–and-sour flavor but if you wish, you can simply use 3 tablespoons of the juice from the drained can.

    There is a lovely park on the other side of town, from my house. It has a pond, trees, walking path and more. I love going there for a picnic, so I can sit and take in nature at it’s best.

    When I was a child we went to Mohawk Park. My Mom packed a picnic lunch & then we went to the zoo. Many precious memories!

    Every summer we go back to my hometown and have a picnic in the cemetery where my Dad and Grandma are buried. Not my favorite place, but I love feeling close to them again.

    I guess I don’t really have a favorite ‘place’. I find spur of the moment, unplanned picnics awesome and they create great memories. Whatever the mood, time of year, weather, etc structure the picnic around those things grab your gear, swing by the store and go!

    We like to picnic at Lake Norman here in NC. Our lake is beautiful, with quite a few picnic areas around! We sometimes go to one of the islands within the lake and picnic there too!

    There’s a small town in the mountains not far from our house. We would have a picnic by the river {when there’s water in it, I live in Ca. in the middle of a 3 year drought!!}, listen to the water going over the boulders. Or at their park, not far from the river.

    We have a spot on the Connecticut River, in a small park in Old Lyme, where there are only 2 picnic tables. It’s very secluded and has an awesome view of the sun setting. No one ever uses this small park. We feel like it is our own private picnic area.

    I always wanted to have a nice traditional picnic at our local parks in Delaware. It would be so peaceful and enjoyable sitting out on the blanket and laying out the food that would be carried in the basket.

    I love to have picnics at our local park, Krug Park. It is large and has many paths for walking and play areas for kids. It also has longhorn cattle and American buffalo and deer.

    We have a family reunion at a State park, Waubonsie, where we have had picnics for about 80+ years. Always try to go to the same spot every year. Lots of memories and we make more every year.

    I have always loved a picnics, when I was small my mom could whip up a picnic from crackers and butter to fried chicken. When my children came along I tried to continue with a picnic when possible.

    When I was little, my mother would take us to the most beautiful park for a picnic. I need to load my two kiddos up and pass that memory on to them! We picnic in our yard sometimes, and at an old farm house; but they would really love that park.

    We don’t live far from Shiloh Military Park.. site of one of the Civil War Battles. It’s a lovely park by the TN river.. we enjoy picnic’ing there as well as flying kites, hiking, and enjoying the local wildlife! =)
