How to Make Homemade Chicken Wings

With all the holiday festivities just around the corner (or even starting now), everyone is looking for a fun party recipe.  Why not try a delicious homemade chicken wings recipe?  They seem to be perennially popular, and they are usually a huge hit at parties.  Just be sure you make a lot, because no one can eat just one chicken wing!  We have a great collection of chicken wing recipes, and you really have to try the Truly Homemade Buffalo Chicken Wings Recipe below to appreciate their saucy goodness.

According to some sources, the Anchor Bar in Buffalo, New York was the original source of what has become known as “Buffalo chicken wings.”  The story goes that when Dominic Bellissimo was tending bar late on a Friday night, a bunch of his friends came in and were really hungry.  Dominic’s mother took the chicken wings that would normally have been destined for the soup pot and deep fried them and coated them in a special sauce she concocted.  A Buffalo wing is born.
Chicken Wing Recipes

With this fantastic recipe called “Truly Homemade Buffalo Chicken Wings,” you not only make the wings themselves, but you also make homemade blue cheese dressing…and the homemade mayonnaise that goes into the blue cheese dressing.  Trust me when I tell you, your guests will be VERY impressed!

Here are the ingredients and instructions for the Buffalo wings themselves:

Ingredients
  • 24 chicken wings, about four pounds
  • salt, if desired
  • freshly ground pepper
  • 4 cup vegetable oil
  • 4 tablespoon butter
  • 2 to 5 tablespoons Louisiana Red Hot Sauce
  • 1 tablespoon white vinegar
  • blue cheese dressing (recipe below)
  • celery sticks
Instructions
  1. Cut off and discard the small tip of each wing.
  2. Cut the main wing bone and second at the joint.
  3. Sprinkle the wings with salt, if desired, and pepper to taste.
  4. Heat the oil in a deep-fat fryer or large casserole.
  5. When it is quite hot, add half of the wings and cook about 10 minutes, stirring occasionally.
  6. When the wings are golden brown and crisp, remove them and drain well.
  7. Add the remaining wings and cook about 10 minutes or until golden brown and crisp.
  8. Drain well.
  9. Melt the butter in a saucepan and add two to five tablespoons of the hot sauce and vinegar.
  10. Put the chicken wings on a warm platter and pour the butter mixture over them.
  11. Serve with blue cheese dressing and celery sticks.

As I mentioned above, to qualify as “truly homemade,” you should  really endeavor to make your own blue cheese dressing to serve with the chicken wings.  While you’re at it, make fresh mayo too (that recipe is below the one for the blue cheese dressing).

Blue Cheese Dressing

  • 1 cup homemade mayonnaise (see recipe below)
  • 2 tablespoons finely chopped onion
  • 1 teaspoon finely minced garlic
  • 1/4 cup finely chopped parsley
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon white vinegar
  • 1/4 cup crumbled blue cheese
  • salt to taste, if desired
  • freshly ground pepper, to taste
  • cayenne pepper, to taste
  1. Combine all of the ingredients in a mixing bowl.
  2. Chill for an hour or longer.  Yields about 2½ cups.

Mayonnaise

  • 1 egg yolk
  • salt, if desired
  • freshly ground pepper
  • 1 teaspoon imported mustard, such as Dijon or Dusseldorf
  • 1 teaspoon vinegar or lemon juice
  • 1 cup olive oil
  1. Place the yolk in a mixing bowl and add salt, if desired, and pepper to taste, mustard, and vinegar or lemon juice.
  2. Beat vigorously for a second or two with a wire whisk or electric beater.
  3. Start adding the oil gradually, beating continuously with the whisk or electric beater.
  4. Continue beating and adding oil until all of it is used.  Yields about one cup.
