I don’t eat breakfast. Never have. In 13 years of grade school and 4 years of college, I never once ate breakfast. And yes, I know I’m setting a bad example. My dad spent at least half of those years telling me that “Breakfast was the most important meal of the day.” And while I’m not sure I believe that (I think I came out okay), there are numerous studies that show that people who eat breakfast weigh less on average and have a higher dieting success rate.
So even though I’m not a breakfast eater, I am certainly an egg lover. I’ve made many variations of the egg sandwich below, and they have all been fantastic. You can pick any cheese, herbs, bread or toppings you like. It’s virtually impossible to mess up this quick and easy breakfast recipe. This sandwich also makes a great lunch or dinner with some potatoes or fruit.
Incredible Edible Egg Sandwich
2 slices sourdough toast
1 slice gruyere
2 slices tomato
1 tbsp. butter
freshly ground black pepper
1. Cook eggs over-easy in buttered pan over medium-high heat. Season with salt, pepper and thyme.
2. Assemble sandwich as desired. Serve immediately.
That was easy!
