Hi everybody! We’re back to share what some of our readers and bloggers had to say for last month’s Monthly Morsel Question What’s your favorite Budget Recipe?

“My favorite budget recipe from my site is butternut squash with chipotle. It’s a simple recipe to prepare and won’t leave a dent in your wallet. It’s also very healthy, which is a major plus.”

Mama J (Jenni) another contributor for RecipeLion and creator of A Little Bit Crunchy, A Little Rock and Roll blog said:

“My favorite budget recipe is for “Scrappy” Vegetable Stock. I use this recipe all winter long when cooking rice or making soups. Homemade stock tastes so much better than anything you can buy in the store. This recipe only costs pennies to make and uses all the vegetable pieces you would normally throw away.”

 

“Also with one bag of frozen Edamame (soy beans) and some brown rice, these Edamame Cakes with Soy Drizzling Sauce turn out to be not only inexpensive to make but healthy and delicious too.”
