Because Passover fell in the middle of the week this year, I didn’t get a chance to travel and spend the holiday with my family. And while I’m not big on traditional Passover food (no leavening or corn syrup allowed), I do of course have a soft spot for matzo ball soup. I didn’t really have the time this week to do a ton of cooking, so I opted for the boxed mix variety. I was a bit hesitant but had heard several positives reviews from trusted cooks. And at $2.50/box, I didn’t have much to lose. The mix was so easy… just add a few ingredients to the matzo ball mix, refridgerate, form balls and drop into boiling broth for twenty minutes. It was tasty too!
