For the May version of This Month’s Healthy Bite, we asked, “What are your favorite Memorial Day holiday recipes?†We got some absolutely fantastic answers, so be sure to check them all out:
From Lana, Bibberche:
Even though we are in SoCal where it’s always grilling time, we have to wait for late spring to get some of the best produce:) To kick in the summer on Memorial Day, I like to make these colorful and healthy grilled vegetables along our steaks or burgers.
From Mama J, A Little Bit Crunchy A Little Bit Rock and Roll:
My favorite salad to bring to barbecues is my Corn, Edamame, Black Bean Salad. This salad is fresh, colorful, and healthy.
From Jessica, Mad in Crafts:
I love making this simple Lemon-Berry Trifle for summer gatherings, from Memorial Day through Labor Day! It is fresh and light, but SO tasty!
From Tessa, Tessa the Domestic Diva:

From Kate, Kate’s Healthy Cupboard:
My favorite Memorial Day recipes are frozen summer treats! I just posted a couple and many more to come! I remember as a kid my mom pulling out the old fashion ice cream maker on Memorial Day Weekend. You can find my Dairy Free Cherry Chocolate Chip Ice Cream and Strawberry Lime Sorbet recipes on my blog.
From Ann, The Fountain Avenue Kitchen:
I have a bunch of recipes that would make me very happy this Memorial Day weekend!
First, these Skewered Fired-Up Grilled Shrimp are an easy but really special hors d’oeuvre and work equally well as a main course.
Since the weather will probably be warm, this Mango Peach Smoothie would hit the spot. Smoothies are also a cool but appropriate blender drink for the under 21 group at any cook-out or party.
Since no cook-out is complete without a really good salad, and because of its easy, day-ahead prep, this Bacon Horseradish Broccoli Salad is a must!
From Jennifer, Jennifer Cooks:
I love outdoor grilling for Memorial Day, and one of my favorite grilling recipes to share with friends is my Sweet ‘n Spicy Grilled Salmon Tacos. We usually grill up some fresh corn on the cob to go along side and cold, crisp slices of watermelon!
From Becky, Glue and Glitter:
The weather here in Atlanta is usually pretty steamy by Memorial Day, so I like to make these Avocado Corn Cups. They’re simple, tasty, and perfect for eating out on the back porch with a cold beer.
From Clair, Finding Clairity:
When I think of Memorial Day, I think of a long weekend full of picnics and warm weather treats. If all goes as planned, it’s the perfect time to celebrate the beginning of the summer! I would love to bring a batch of vegan Mac Sans Cheese to a potluck party, or serve up some healthy Banana ‘Nice’ Cream to visitors.
From Jill, SaucyCooks:
I would have to say that some of my favorite Memorial Day Recipes include Our Chocolate & Chilli Quinoa & Oat Cookies with Cherries & Almonds, our Dry Rubbed Ribs and Non Dairy Mango Pudding.
From Susie, Fluffy Chix Cook:
Thanks to everyone for all the fun responses!
