12 DAYS RECIPE CHATTER

Today’s Recipe

On the twelfth day of our 12 Days of Christmas in July Giveaway, my true love gave to me…the “No Peek” Beef Casserole Recipe from our Test Kitchen!

IMG_8999Serves 4-6

INGREDIENTS

  • 1 tablespoon olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 8 ounces white mushrooms, stems trimmed and caps cut into quarters
  • ½ cup chopped fresh parsley
  • ½ cup red wine or beef broth
  • 1 envelope onion soup mix
  • 1 can condensed tomato soup
  • ½ cup sour cream
  • 1 pound wide egg noodles
  • ¼ cup minced fresh parsley for garnish

DIRECTIONS

  1. Place olive oil into a wide (12-inch if possible) non-stick skillet and place over medium high heat.
  2. Add meat and cook, stirring often, until cubes are browned all over, about 7 minutes.
  3. Remove meat to the crockpot insert but leave any oil and juices in the pan.
  4. Add mushrooms and parsley to the pan and cook, stirring, for 3 -4 minutes until browned. Add wine to pan and allow to cook, stirring, for another minute.
  5. Pour mushrooms and juices into the crockpot and add soup mix and canned soup, stirring to coat the meat with the mixture.
  6. Cook on high setting for 5 hours – do not open the cooker during this time.
  7. Stir in the sour cream and serve over cooked noodles, garnish with parsley.

I clean up after each meal and ever so often I take every thing off the cabinet and wipe it off with one of the sanitizing wipes to be sure there are no “hidden” areas I have not cleaned. I usually do the major cleaning in sections so it is not overwhelming. By the way I love the recipe above of the beef with noodles.

keep things organized as well as stocked–great cooking pots and pans–clean up using dish soap, bleach needed to sterilize if dealing with raw chicken, vinegar also works great to clean with and wipe down counter tops and a great help to chase cooking odors, paper towels well stocked, plenty of dish rags and dish towels on hand as well. and of coarse using a built in dishwasher for final cleaning of dishes and pots and pans used during food prep.

I put things away immediately after I am done with them, I am constantly wiping down anything that has food or such on, and just keep everything neat, clean, and organized at all times.

How do you keep clean in the kitchen?

I always cook in the nude, then all you have to do is hose me down after I am finished cooking.

At the cost of sounding redundant given the comments above, I also find that cleaning as I go is the best approach instead of letting it all pile up and the spills dry up. I use natural cleaning agents like vinegar in water with a few drops of essential oil and voila- the kitchen is as spick and span as it was before I start to cook!

I treat meat like it is fully contaminated! A microbiologist and my own experience proves this to be sad but true. I also soak all meat in cold water with 1 cup kosher salt for 20 minutes then rinse and cook well done, never never red.

Clorox wipes and I are on first name basis, we’re practically best friends. Of course considering I have a toddler in the house, that wants to be my helping hand at everything, including cooking, that means my kitchen counters need to be clean and sanitized for lil’ hands at all times!

Always clean as I go when cooking, use lots of vinegar and water, and, after the meal, countertops, microwave, stove, and refrigerator all get wipe off. If any food dropped on floor, use small broom and dust pan to get it up.

I always have a bowl of hot soapy water in the sink to wash my hands between cutting veggies or meat. It keeps me from contaminating the faucet with chicken or other meat juices . I also add a few drops of bleach to the water . In case of a drip somewhere , I have a bottle of Clorox Clean Up close at hand.
