Hello all you cooking enthusiasts! So Autumn is here, the beautiful colors are everywhere and I’m seeing orange. I love it! Fall is my favorite time of the year, for it’s food, its colors and even its cooler temperatures (I know blasphemy right?). Now that we’ve all been pumpkin picking (if you’re lucky) or even just bought them from your local market, pumpkins are around in abundance and it’s time to cook.
There are so many great ideas out there for interesting and unique ways to cook pumpkin. They aren’t just for carving folks! Now I know many people might like to default to the always wonderful pumpkin pie or pumpkin cookies, but let’s also try thinking outside of the box too. I can’t get over this recipe I found over at Not Eating Out in New York for Chicken, Pumpkin and Hominy Chili, fantastic, look at all the flavors! I even saw one idea to serve that chili inside a hollowed out mini pumpkin, even better!
Over at Pennies On A Platter I found some irresistible recipes, like this Pumpkin Ice Cream and Pumpkin Scones, so delicious I’m getting hungry just typing this. A go-to for me, and is at the very least something anyone can do with the insides of a pumpkin, are baking the pumpkin seeds. Yes bake them! I swear you won’t regret this healthy, tasty treat, try this easy recipe for Roasted Pumpkin Seeds. Hard to resist right?
