The Best Pineapple Upside Down Cake Recipe + A Pretty Sweet Giveaway!

Every year for my dad’s birthday, he always asks my mom to make one simple dessert: pineapple upside-down cake. He doesn’t want a chocolate cake or a funfetti treat. He just really wants a pineapple upside-down cake. (Which is totally fine with my mom, as it’s one of the best easy cake recipes ever.)

So, needless to say, I’m a bit of a pineapple upside-down cake recipe conoisseur. We had to go through quite a few cake recipes in order to settle on the best one (which currently happens to be from Betty Crocker, I believe). But, we’re always looking for new recipes to try.

One of the recipes I have on my list to make for my dad is the gooey pineapple upside-down cake recipe below. It’s perfectly sweet and has such a wonderful tropical flavor. You’d never believe that it’s actually a pretty healthy cake recipe just by looking at it.

Guilt-Free Pineapple Upside Down Cake

Guilt-Free Pineapple Upside Down Cake

Serves 8

Ingredients

  • 15.5oz can pineapple slices in juice
  • 1 Tablespoon organic honey
  • 6 Tablespoons butter, softened
  • 1/2 cup Natvia
  • 2 eggs, lightly beaten
  • 1 1/4 cups self-rising flour, sifted

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a round ring cake pan. Line the base of the pan with parchment paper.
  3. Drain the pineapple, reserving 2 Tablespoons juice. Cut the pineapple slices in half and set aside.
  4. Drizzle the honey over the base of the prepared cake pan. Then, arrange the pineapple slices on top of the honey.
  5. Using an electric mixer, beat the butter and Natvia for 3 minutes or until light and fluffy. Add eggs, one at a time, beating after each addition.
  6. Add flour and reserved pineapple juice to the butter, sugar, and egg mixture. Stir to combine.
  7. Once combined, spread the cake batter over the pineapple slices in the cake pan.
  8. Bake for 35 to 40 minutes, or until your cake tester comes out clean. Let cake cool in pan for 5 minutes and then transfer to a wire rack to cool completely before serving.

      My favourite is Black Forest Cherry Torte.

      I make mine with an authentic German recipe that uses finely ground nuts – almonds in this case – and fine dry bread crumbs in place of most of the flour used in generic cake recipes. I like to sprinkle the 6 to 8 thin layers of cake with Amaretto in addition to the usual cherry filling and whipped cream for an extra flavour kick.

    I’m beginning to like this new “dump cake” concept, you put any kind of cake mix in a pan and add whatever fruit with it’s juice to it, it’s quick and easy and boy does it taste good……..

    Orange cake has to be on the top! Actually who can pick just one? How about 3 I can narrow it to 3 Angel food with strawberries and real whipped cream( low fat of course), and pineapple upside down. I should never have said I could do it in 3. Now I’m wanting cake, please

    My Apricot Brandy Pound Cake

    Ingredients:
    3 cups sugar
    1 cup unsalted butter
    6 eggs
    3 cups all-purpose flour
    1 teaspoon salt
    1/4 teaspoon baking soda
    1 cup (8 ounces) sour cream
    1 cup Apricot Brandy
    1/4 teaspoon rum flavoring
    1/4 teaspoon almond extract
    1/2 teaspoon lemon extract
    1 teaspoon orange extract
    1 teaspoon vanilla flavoring

    Directions:
    1. Grease and flour angel food or bunt cake pan. Preheat oven to 375 degrees.
    2. Cream together butter and sugar in a very large bowl. Add eggs, beating well after each one.
    3. In a medium bowl, sift together flour, salt and baking soda; set aside.
    4. In a small bowl, combine sour cream, brandy, rum and vanilla flavoring and all extracts.
    5. Add dry ingredients alternating with liquid mixture to creamed butter-sugar.
    6. Pour into prepared pan. Bake 70 to 90 minutes or until toothpick comes out clean.

    Notes: You can use a food processor for easier mixing. If you have a large measuring cup, you can put all liquid into it so you do not need to dirty up another bowl. You can use BakersJoy spray if you do not want to grease and flour the pan. If your pan is Angel Food, put foil under it so if the pan leaks, it will not leave a mess. Put pan in middle of the oven for more even baking. Buy sour cream in an 8 ounce container for ease of measuring.

    My favorite cake is angel food cake. The possibilities are endless with what you can do with it. Slice and layer it with anything you like, eat it alone (yum), make a triffle. It’s even healthy as desserts go. Yes, my favorite cake is definitely angel food.

    My husband’s favorite is Pineapple Upside-Down Cake and I really like it, too. I recently saw a recipe fora cake that is a combination of cheesecake and pineapple upside-down cake. I think that could be my new favorite even over carrot cake.

    My favorite “cake” from my childhood was Chocolate Refrigerator Cake, which has no actual cake to it (it’s a kind of whipped chocolate cream with vanilla wafer crumbs). My mother’s favorite was also one of my favorites, a spongecake cupcake with dark chocolate filling and whipped cream on top. And I love home made red velvet cake, although my husband and daughter once made quite a mess of my kitchen trying to make me one – red food coloring everywhere!

    The easiest way to make pineapple upside down cake:
    Prepare yellow cake mix (I use pills bury) as directed, substituting reserved juice for water.
    Melt 1 stick magazine in 9×13 glass baking dish in microwave.
    Drain one can unsweetened pineapple rings, reserve juice.
    Place pineapple rings in pan, using half rings in the center.
    Place maraschino cherry in each ring center.
    Press light brown sugar over all, soaking up all melted margarine.
    Pour cake batter over all.
    Bake as directed.
    Yummy and so easy! Enjoy!

    I must admit my favorite cake involves layers with lots of icing or frosting, fondant being my favorite. But a yummy slice of Pineapple cake does hit the spot. And I’m surprised at how easy the recipe is; it always seemed like such a long process. This looks delicious, I’ll definitely be trying this at home. Hope I can make it taste as good as that picture looks 🙂
