Ch-Ch-Ch-Changes: Pork Industry Faces Big Name Changes

May 11, 2013 by MrFoodTestKitchen

You can cross those pork loin chops off your grocery list. They no longer exist. After an 18-month, in-depth collaboration between the National Pork Board and the National Cattlemen’s Beef Association, the pork industry has decided to rename the various cuts of meat to match those set by the beef industry in an effort to become more consumer-friendly, according to a news release by Pork.org. Instead of looking for those pork loin chops to prepare for dinner, you can ask your local grocer where to find the Pork Porterhouse Chop.  The question is: will these changes help consumers long-term or will the initial confusion further hurt pork sales?

For now, it seems as though the pork and beef industries are taking that leap of faith by renaming over 350 cuts of pork and beef, according to an article by Freep.com. These changes will start rolling out in stores over the next few months. The pork industry hopes that consumers’ familiarity with popular beef cuts will translate to a greater comfort level regarding similar cuts of pork.

If you’re looking to prepare a handy guide to use when making pork recipes, check out just a few of the name changes to watch out for:

Pork Butt —> Boston Roast
Pork Loin Chop —> Pork Porterhouse Chop
Pork Rib Chop —> Pork Ribeye Chop
Pork Top Loin Chop —> Pork New York Chop

Only time will tell if these changes will help elevate the pork industry. If you wish to try your hand at some pork recipes during the big switcheroo, the Mr. Food Test Kitchen has a brand-new, free eCookbook out with plenty of recipes that’ll have you on your way to becoming a pork pro.
