Tis the season for potato salad! With the summer in full swing, you don’t really need a special occasion to whip up your favorite potato salad and eat it cold with a sandwich or burger. And there’s something about a homemade potato salad that I truly love, avoiding the overly-relished storebought salads we all know. I’m also noticing that potato salads have really evolved from traditional varieties to now include some interesting ingredients that seem to compliment the signature potato-mayo yumminess of years past.
