Hello all. It’s Danielle from AllFreeCasseroleRecipes.com again. I don’t know about you, but once summer hits, I feel like I crave Mexican food more than ever. All of the vegetables that I use for my Mexican recipes, like tomatoes and peppers, are in season in the summer. I can’t resist the taste of fresh vegetables. My mom, for example, makes the BEST salsa during the summer. She uses tomatoes, peppers, and cilantro that she grows in her garden in our backyard. She sometimes makes the salsa with store-bought ingredients but it never tastes quite as good. The salsa is such a hit at parties that there are never any leftovers. In the same vein, my aunt served Mexican food for my cousin’s birthday party a few weeks ago and everyone at the party devoured it. So maybe I’m not the only one who goes loco for tacos, burritos, and the like during the summer.

Baked Brown Spanish Rice – The perfect side. It’s warm and comforting.
Mexican Sweet Potato Skins (My favorite!) – Black beans, corn, and other veggies covered in cheese and Mexican spices. This type of filling also goes well with poblano peppers. Look at the first picture above and see for yourself how fantastic this dish looks.
