Hey there! Holly here from Club Crafted again with a recipe for s’mores cookie cups that will satisfy your summer taste buds!
I think of summer as s’mores season, and it’s coming up fast! To get the taste of s’mores in a cookie anytime, these bite-sized s’mores cookie cups have it all.
Made with a classic brown sugary cookie dough, filled with melted chocolate and graham cracker crumbs and topped with a toasted marshmallow, these treats are perfect for get-togethers or just an evening at home. It has all of the s’mores flavor packed in a cookie-like treat, and there’s no need for a campfire!
This recipe yields about 20 cookie cups.
Ingredients:
- ½ cup butter, melted
- ¼ cup white sugar
- ½ cup packed light brown sugar
- 1 tsp vanilla
- 1 egg
- 2 cups all purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 4 oz. semi-sweet baking chocolate, chopped
- 1/4 cup crushed graham crackers (about 2 crackers)
- Large marshmallows
Preheat the oven to 350 degrees F. Lightly spray a mini muffin pan with cooking spray and set aside.
Melt the butter in the microwave for 30-40 seconds. Pour into your mixing bowl and let cool for several minutes.
Mix in the sugars until smooth, and then add the vanilla and egg. Beat for several seconds but do not overmix. Add the flour, baking soda and salt and mix until slightly crumbly. If it’s too soft, add a little bit more flour to achieve the right texture.
Form into balls and place one in each muffin cavity. Bake for about 10 minutes until the tops begin to brown very lightly. Remove from the oven and immediately press a tablespoon (carefully so that you don’t burn yourself!) into each piece to create the cups. Let cool completely before removing from the pan.
Melt the chocolate in a small bowl on defrost mode for 30 seconds, stir and repeat until completely melted. Move to a pastry bag or a ziplock bag with the tip cut off and pipe chocolate into the middle of each cooled cup. Sprinkle with graham cracker crumbs.
Lastly, place all cookie cups on a flat baking sheet. Place a large marshmallow on top of each cookie cup and place in the oven on the broiler setting for 1-2 minutes until the tops are lightly brown. Remove from the oven, let cool and these are ready to serve!
Whether served warm or cooled, one bite is like s’more heaven!
