For many, Labor Day next weekend will mark the end of summer. I don’t know about you but I am am enjoying the last of summer popsicles while I can. Popsicles are a great dessert or afternoon treat and can be very low-fat, as opposed to ice cream bars. And there’s just something fun about eating your dessert off a stick right? I like to puree fruit with yogurt and a touch of juice (O.J., lemon and even lime) and freeze in a popsicle tray. If you do not have a popsicle tray, freeze in Dixie cups with a popsicle stick in the middle. Fruit popsicles are also a great way to use up a large amount of fruit before it goes bad, as with a watermelon or a bushel of necatrines. Waste not!
Chocolate Pops– Add cocoa powder to plain yogurt, sweeten slightly and freeze. Use honey for a suger-free chocolate treat for kids.
Low-Fat Fudgesicles– Use chocolate pudding to create creamy chocolate popsicles.
Banana Pops– With a touch of peanut butter, these are a great afternoon snack for kids or adults.
Watermelon-Orange Pops– Watermelon is still in season so take advantage with these pops.
