Ah zucchini… that frustrating little word that puts my spell check to good use, is it two C’s or one, wait…does it have an H? …ha! But seriously zucchini has so many usages in the foodie world, it’s a simple and fairly popular vegetable that’s part of the squash family. (Now technically zucchini is a fruit but I’m going to plead the 5th and pretend I don’t know that, really it’s more of a vegetable to me!) It’s also one of my favorite things to cook with because it’s so versatile. Though it’s technically a summer squash you’ll have no trouble finding this all year round, it’s everywhere.
One of the best ways to use a zucchini is for zucchini bread. I don’t know about the rest of ya’ll but zucchini bread was pretty much a staple growing up in my house. My mom loved finding ways to get the benefits of vegetables into us one way or another. But she never had to force feed me this bread, I think it’s amazing. It’s filling, it has a great texture and it’s pretty healthy too, while still catering to my sweet tooth.
Another cool thing about zucchini bread? You can pair a ton of other flavors with it and make it even more interesting, like chocolate, pineapple or raisins. Slow Cooker Zucchini Bread
Ingredients:
1/2 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon baking powder
1 1/2 cups flour
1 1/2 teaspoons cinnamon
2 eggs
1/2 cup oil
1 cup sugar
1 1/2 teaspoons vanilla
2 cups zucchini, shredded
1/2 cup nuts, chopped
Instructions:
1. Sift salt, baking soda, baking powder, flour and cinnamon together, set aside.
2. Mix eggs, oil, sugar and vanilla until blended. Sift in dry ingredients and mix until moistened. Fold in zucchini and nuts.
3. Place in a greased and floured mold or slow cooker insert pan. Place in slow cooker, cover and cook on high for 2-3 hours.
Seriously, that easy!

What’s interesting about this one is her cinnamon sugar topping; I think is a yummy way to change things up.
