I read the recipe for stupid chicken and I have one even easier. I just put (boneless & skinless)6 thighs, or sometimes I use 6 or 8 chicken breast. in the crock pot and pour one 24 oz. jar of chunky salsa over the chicken (your choice medium or hot) let cook on low for 6-8 hrs.
Then I just shred the chicken up in the salsa and mix into a cooked box of any brand of seasoned yellow rice. Sprinkle some shredded cheese of choice and broil just long enough to bubble up the cheese. I serve this with sour cream on the side. We love it
