Normally, we like to grill out on the deck at least a couple of times a week. We do this even in the winter, unless the shoveling of the deck is going to be too heinous. Well, it’s summertime now, so there is (thankfully!) no snow, but we have had a ton of rain. We don’t mind barbecuing in a little rain, but torrential downpours are another story. Of course, if the weather forecasters were a bit more accurate, I wouldn’t have salmon fillets thawing in my refrigerator! Fortunately, I found a tasty-sounding recipe for Poached Cutlets of Salmon, so instead of grilling, we’re going to give that a whirl. I don’t use a Crock-Pot much, so it never occurred to me that we could cook fish in it. It will be interesting to see how this turns out.
I always like to have a little something sweet after dinner, but summertime (even if it’s rainy) calls out for something light. This Apricot Ice recipe looks tempting, so I’ll be making that while the salmon is cooking. Now, I’ve got a main course and dessert, so I just need a salad that’s fun to round things out. I like the looks of this Barley and Corn Salad with Jalapeno and Lime Dressing, so I think that should do it.
Lemon is such a natural pairing with salmon, and I do enjoy it in my water, too. It’s just too bad we don’t grow lemon trees in my part of the country…I could pick a lemon and slice it for my water and be all set for an east indoor summer feast! Ah, well. The lemon from the produce mart will just have to do.
