On the first day of our 12 Days of Christmas Giveaway, my true love gave to me…this Streusel-Topped Sweet Potato Casserole from WMF Americas.

 

Struesel Sweet Potato Casserole

Streusel-Topped Sweet Potato Casserole

Serves 8 – 10

NOTES: If your casserole dish is too large for your microwave, potatoes may be cooked in another dish and transferred to the bake dish in the overlapping pattern. Or the potatoes may be cooked in a pot of boiling water for 5-6 minutes, drained completely and then arranged in the dish.

Ingredients:

  • 3 ½ – 4 pounds sweet potatoes
  • 1/3 cup brown sugar
  • ¼ cup chilled butter
  • ¼ cup flour
  • ½ cup coarsely chopped pecans
  • 2 cups whipping cream

Instructions:

  1. Preheat oven to 375 degrees F. Spray a 9 x 13 casserole dish with cooking spray.
  2. Peel and cut potatoes into ¼” slices. Arrange the slices in an overlapping pattern in the dish. Add ½ cup water and cover the dish with plastic wrap. Microwave on full power for 4 – 8 minutes until potatoes are still firm and hold their shape but are about half-cooked.
  3. Meanwhile, combine brown sugar, butter and flour using a fork or pastry blender to form a crumbly topping. Stir in the pecans.
  4. When potatoes are out of the microwave, carefully tip the dish and pour out any water in the bottom. Rearrange the rows as necessary. Pour the cream over the potatoes and sprinkle with the streusel topping – it will be somewhat sparse and not cover the potatoes completely.
  5. Bake uncovered for 50-60 minutes – the potatoes should be soft and the cream will have formed a caramel-like sauce. Serve while hot.

    We like them sliced sprinkled with sugar mixed with a little flour. Cover and bake till tender. The flour thickens the juice from the sweet potatoes. Then I like baked whole with skin and topped with cinnamon butter.

    I love sweet potatoes! It’s always hard to decide what way I want to eat them. Sometimes its baked simply with butter and brown sugar and other times I like to make it more of a casserole with mashing them and top them with marshmallows. Oh and then theres just the simple baked sweet potato with the skin on and covered with butter.

    I love sweet potato frys, and mashed sweet potatoes, and sweet potato chips. We recently tried mixing sweet potatoes and regular potatoes in a mashed potato combo and it was great.

    I like sweet potatoes anyway that can be cooked, baked, candied, fried, and in casseroles. My favorite way to cook sweet potatoes is sweet potato casserole with pecans and brown sugar topping not with marshmallows for the topping.

    We just tried a new recipe for mashed sweet potatoes with maple brown butter sauce which was delicious and easy to make. It will be our go to way to enjoy them from now on.

    We like sweet potatoes many ways, one of the favorites is with cream, brown sugar and a little butter, baked, since kids are grown, marshmallows are optional. 🙂 My personal favorite way is just baked.
    with butter, salt and pepper. Doesn’t get much better than that!

    Baked or mashed then adding brown sugar, butter, and a little pumpkin pie spice, then topping with pecans or marshmallows. We have two grandchildren allergic to nuts, so usually we use marshmallows.

    There is NO way that sweet potatoes can be prepared and I do not like them. I LOVE them!! My favorite, if I had to choose, would be Sweet Potato Pie cooked with lots of butter, flavorings, and cooked until it it brown.

      I boil them and mash then with some cream then spread them in a casserole and top with brown sugar and butter melted together and top with pecans and heat in oven until hot

    I love to cut them into strips and bake them in the oven for oven fries instead of french fries. I also like to grate them and make them into sweet potato tater tot. Again I bake them in the oven so I don’t get all that oil. They’re so good and go great with beef dishes.

    Well since i live not far from the Sweet Potato Capital of the World, Vardaman, Mississippi, i really like a lot of things made with Sweet Potatoes. My most favorite thing though is the Sweet Potato Roll. It is cake that is made out of sweet potatoes, baked in a thin roll-able cake and with a filling that is to die for lol……You can also freeze this and have a slice of it whenever you like………Sooo Good!!!!

    My favorite way to eat Sweet potatoes is mashed with a lot of butter; brown sugar, cinnamon and pecans baked in the oven and just before they are done a lot of marshmellows are added on top and put under the broiler for a few minutes.

    Our family really enjoys mashed sweet potatoes, beaten with eggs, a little heavy cream, nutmeg and cinnamon, put in the crock pot and top with a mixture of brown sugar, a little flour, some melted butter, and finely chopped pecans.

    Cooked drained ground sausage mixed large bowl of cooked whipped sweet potatoes and more ground sausage with large bowl of seasoned whipped mashed potatoes mixed*two heaping tablespoons of each caddycorners hand mush together aka like big muffins and large trayful lightly bake in oven*one in bowl with lots of golden mushroom gravy with onions,hmm?*

    My family and friends love sweet potatoes sliced in rounds drizzled with olive oil and sprinkled with a little kosher salt and roasted. They come out tasting super sweet and oh so healthy, too! I would love to win the roaster because mine is like 40 yrs old….I really need a new one and would love to have a really nice one for once!

    I make a sauce of butter, Brown sugar, maple syrup,and of course cinnamon. I pour it over my sliced ( preboiled) sweet potatoes with slices of granny Smith apples and sometimes I add walnuts and bake.hmmmm good !!!

    Baked with butter and cinnamon. That’s the favorite way. But cut up and baked with some butter and brown sugar, topped with marshmallows is the holiday way.

    Probably my favorite way to cook sweet potatoes is to bake them, then serve with some butter and sour cream. But then there’s the soup with sweet potatoes and kale and sausage (that my Dr. says I need to avoid)that I love so much. Hot, thoroughly cooked, almost melted, makes me want one right now in the middle of the night!

    I had surgery on my hand around Thanksgiving time this year and a friend brought the best sweet potato, cranberries and apples baked together and that will be my traditional side dish for the next few years. It was simply wonderful. Sweet potatoes were chopped or diced and no mashed or mushy. Can’t wait to try the recipe myself

    Since I am diabetic, sweet potatoes have been my baked potatoes for quite awhile; very enjoyable with a sprinkle of cinnamon and butter (no sugar). However, went to a party in which baked potatoes were offered with all kinds of toppings including taco meat and cheese. Baked sweet potatoes were offered also; all I can say is Wow!, the taco meat and other taco toppings mixed well with the sweet potatoes. I will use this idea often as sweet potatoes offer a great deal of fiber plus great taste.

    I love to make sweet potatoes baked with just a hint of butter,never thought I would like them that way until I had to go on a special diet and I tried them and they were so delicious and filling .Adding a little cinnamon on top brought out their sweetness without having to add any sugar.

    We MUST have sweet potatoes for all special dinners…..

    In a large baking dish, 3-4 large cans of sweet potatoes drained, sprinkle on brown sugar and melted butter as needed and bake for 350 for up to 40 minutes. Then add tons of marshmallows and pieces of pecans and return to oven and brown till the marshmallows start to melt and turn brown.

    SERVE and enjoy!!!

    Candied and roasted sweet potatoes are yummy but I also like to do them in the microwave. Its so simple and quick, I just slice one in half cook in Microwave for a few minutes, add butter salt and pepper and we have a yummy side with dinner. They are very nutritional also.

    Sweet potatoes baked in the oven with the skin on. Then take them out of the oven, take the skin off, mash them and add brown sugar and a little butter!

    For a quick fix, I bake them in the microwave and put a little butter and a small amount of Mrs. Butterworth’s Syrup on top. It is fattening but that is good!

    The way my family love sweet potatoes is to have them cut in chunks, baked in the oven with butter, brown sugar and chopped pecans. They have a nice sweet crunch and the pecans give it the oh so great taste.
