Zippy Zucchini Recipes

While many people are sad that summer is coming to an end, I’m not complaining. It’s a time for wonderful bounty from the garden, from tomatoes to zucchini and lots more. Zucchini happens to be one of my favorite vegetables, and we eat it year-round (when we can find it!), and I love cooking with it. It isn’t hard to find zippy zucchini recipes. There are zucchini casserole recipes, recipes for zucchini bread, zucchini corn cakes,even zucchini meatloaf.

One super-easy way to cook zucchini is simply to do it on the grill.  Simply wash your zucchini — do NOT peel it — and cut it into coin-shaped slices. Get a big piece of aluminum foil and pile the zucchini in the center. Cut up one small onion, or about half of a medium-sized one, and add that to the zuke. Run a clove or two of garlic through a garlic press and add that, then throw on a pat or two of butter or your favorite buttery spread. Make the foil into a pouch around the veggies and toss it onto the grill while you’re cooking your meat for dinner.  When the meat is done, the vegetables will be too.  If you’re making meat that takes a long time to cook, figure on about a half hour for the veggies.  That way, the onions get nice and tender.  Point of note:  When opening the foil, be sure to do it over a bowl, or the resulting juices will go all over the place!
