So we all now know that squash is in season and out in stores and gardens in abundance, as mentioned here on our sister blog FaveDiets: Wrap your mind around some squash. One member of the squash family that is always easy to find is zucchini.
Zucchini, just like the tomato is technically a fruit, but is most recognized and served as a vegetable. But I think it’s a vegetable that is sometimes forgotten about, passed up in stores for the more simple vegetables like peas, green beans or carrots. Let me tell you though, for those of you passing it up — turn around and give it another look.
Zucchini is one of the most versatile, healthy and easy to cook veggie-fruits out there. It’s low in calories, high in potassium and vitamin A, and can also be a good source of vitamin C , go figure! I mean many of us have probably tried zucchini bread or thrown it in our stir fry, but there are so many more things you can do with it. Whether you’re baking it in a dessert, adding it to pasta, salads, or soups, zucchini is a very tasty option that blends well with so many things.
